----回锅肉Twice-cooked pork



回锅肉是中国川菜中一种烹调猪肉的传统菜式,四川家家户户都能制作。回锅肉的特点是口味独特,色泽红亮,肥而不腻。所谓回锅,就是再次烹煮的意思。

The twice cooked pork is a traditional cooking style of pork in Sichuan cuisine, which can be made by every household in Sichuan. It is characterized by unique taste, bright red color, fat but not greasy. The so-called "back to the pot" means to cook again.

嫩嫩的五花肉里夹杂着几片蒜,蒜片上包裹着一层光泽有透明的油,但这层油并不会让肉变得油腻起来。盘子里的小红椒,使得这盘回锅肉远远看去犹如一朵色彩鲜艳的花朵。凑近闻一闻,更是香飘四溢。
