——油焖大虾 Stewed prawn


油焖大虾是一道历史悠久的名菜,主要食材为大对虾,使用特有的油焖技法,鲜香甜咸四种味道相辅相成,回味无穷。

Stewed prawn is a famous dish with a long history. The main ingredient is prawn. Using the unique technique of stewing prawn, the four flavors of fresh, sweet and salty complement each other and have endless aftertaste.  

油焖是主要以调味油和调料汁进行焖制成菜的一种方法。焖制时加汤量比其他焖法要少,焖制时间要短,初步熟处理一般采用煸炒或油炸的方法。 油焖要求原料鲜嫩易熟,成菜色泽浅红油亮。

Stewing in oil is a method of stewing in seasoning oil and sauce. When stewing, the amount of added soup is less than other stewing methods, and the stewing time is shorter. The method of stir frying or frying is generally used for the initial processing. The raw materials for stewing are fresh, tender and easy to be cooked, and the color of the finished dish is light red and bright.

虾中含有20%的蛋白质,是蛋白质含量很高的食品之一,是鱼、蛋、奶的几倍甚至十几倍,虾和鱼肉相比,所含的人体必需氨基酸缬氨酸并不高,但却是营养均衡的蛋白质来源,另外,虾类含有甘氨酸,这种氨基酸的含量越高,虾的甜味就越高。

Shrimp contains 20% protein, which is one of the foods with high protein content. It is several times or even more than ten times of fish, eggs and milk. Compared with fish, shrimp does not contain high valine, but it is a protein source with balanced nutrition. In addition, shrimp contains glycine. The higher the content of this amino acid, the higher the sweetness of shrimp.

虾和鱼肉禽肉相比,脂肪含量少,并且几乎不含作为能量来源的动物糖质,虾中的胆固醇含量较高,同时含有丰富的能降低人体血清胆固醇的牛磺酸,虾含有丰富的钾、碘、镁、磷等微量元素和维生素A等成分。

Compared with fish and poultry, shrimp has less fat and almost no animal sugar as an energy source. The cholesterol content of shrimp is higher, and it is rich in taurine which can reduce human serum cholesterol. Shrimp is rich in potassium, iodine, magnesium, phosphorus and other trace elements, as well as vitamin A.

油焖大虾色泽浅红油亮,味香飘逸,鲜嫩微甜,油润适口,趁热剥食,鲜嫩、细滑,洁白的虾肉的虾肉,包裹着浓浓的酱汁,集色香味与一体,实在妙不可言,让人胃口大开,在餐桌上是很受欢迎的一道菜品。
